Breakfast tacos


Breakfast tacos are about as fast as you want them to be. 
It takes about 10-20 minutes to make 12-15, which should feed at least 4 people for about $4.25.


Here's the plan:
Buy: eggs $1.25 doz, 8 oz cheddar cheese (shredded or shred your own - your call) $1.25, corn tortillas $2 for 300 ct (you're gonna have leftover!!), salsa $2.50 jar (I luv El Pinto brand but it costs more than some)


Step 1:
scramble up eggs and salsa in a frying pan.  I suggest 6 eggs for 4 adults and salsa to taste, don't forget a little salt and pepper too!


Step 2:
Either microwave a stack of tortillas for 1 minute - until soft and scoop eggs and cheese in them 
or
Put the egg mixture in a dish to stay warm and start toasting the tortillas in the frying pan.


I like to toast them because then they are a little crunchy and don't fall apart as easy. It adds about 20 seconds per taco though.
I use a heavy--ish skillet on High - NO grease - just toss in the tortilla and flip it after it's steaming. Toss some shredded cheese and a spoonful of eggs on it while the other side toasts.
Then, slide it out of the pan and fold it over. Viola!
