I don't go all out for company ;0)

 I forgot to tent it with foil, so it go a little dry...

But, it took me exactly the time it took the oven to preheat to put this dinner for 6 together and only about 45 minutes to cook.

You guessed it - a Boar's Head roast Beef from the deli, I sliced it into thick pieces and then dumped a bag of frozen "Stew" vegetables in.  There are small potatoes, onions, celery and carrots in the mix.  It was really good!
